Soapstone is recognized by the FDA as a suitable surface mineral for contact with food. It is softer than granite and limestone, but it is also more stain-resistant. 

With special treatment, soapstone turns from light gray to deep blues and other colors. This is done through mineral oil, which also helps the soapstone to oxidize. Over the years, this countertop will take on new characteristics because of the oxidation process.
